    Victoria, Texas is situated halfway between Corpus Christi and Houston, Texas. I’ve often wondered why so many people are preoccupied with things that are halfway or in the center of, or in the middle of something. There is a Center, Centerville and Midland, Texas but so far there is not a Halfway, Texas. Perhaps someday when we run out of names for towns or streets there will be a town or a street called Halfway. Hopefully, we’re halfway there.

    Newcomers to Texas just assume that Victoria was named after one of the Queens of England and this is not the case at all. Texas women are some of the most beautiful in the entire world and the Texas men would often name a new city or town after their wives or sweethearts. Victoria was not only a beautiful woman; she also developed some great recipes for cooking armadillo.

    If you happen to be in the area during Victorias’ annual Armadillo Festival be sure and visit for a while. Not only is there a genuine Texas Rodeo complete with buffalo, longhorn steers and clowns there are also many stands and booths featuring the local ethnic foods. Of course there are the popular and well-known foods such as chili, tamales, tacos and bar-b-que; there are also the numerous stands and booths that feature many of Victoria’s secret recipes for armadillo.

    You may choose from armadillo burgers, armadillo chili, armadillo tacos, bar-b-qued armadillo, armadillo etufe and my favorite:" armadillo on a stick". Be sure to see the harvesting of the armadillos at the armadillo rodeo roundup. After the cowboys have herded the armadillos into the big corral at the rodeo, then the cooks come into the corral to select the choicest of the armadillos to prepare for some good ‘ol armadillo stew and other entrées.

    After the cooks have harvested the armadillos and cleaned out the shells, they’ll give’um to some other fellows that will add a few doo-dads to them and sell’um as hats. Maybe the Wisconsin folks think that their "cheese heads" are unique, but there is nothing cooler than an "armadillo hat". The last time that I was at the Armadillo Festival the Armadillo Hats were selling for about $40 to $50 bucks. If you’d like to save a little money, you can just pick up an armadillo from the side of the highway. It’s illegal to shoot armadillo from the side of the road in Texas and I think the same law also applies to shooting husbands and wives. It’s easy to determine a live illegal armadillo from the dead ones The dead armadillos will be lying on their back with their feet sticking up in the air.

    Just pull off the side of the road and pick up the armadillo. If you’re hungry it’s probably not a good idea to eat an armadillo that’s been lying on the side of the road for too long. However, if you just ran over the armadillo with your car, then it’s nice and fresh and partially grilled. Then while you’re in town, you can purchase a copy of Victorias’ Secret Recipes for armadillo for less than ten bucks, and have a nice meal and a really cool hat.
